Chargrilled Salmon and Cherry Tomatoes on a Spinach, Basil and Garlic Olive Oil Salad
Rub salmon fillet with lemon garlic seasoning, pepper and sea salt to taste. Chargrill on both sides until cooked to your liking. Add cherry tomatoes and onion rings to the pan and grill on both sides until tomatoes and onions have softened.
While salmon is grilling, combine spinach leaves and fresh basil leaves in a bowl. Drizzle with 1 teaspoon garlic olive oil. Add onion rings and tomatoes to the salad, and toss to coat in the oil. Top with salmon and avocado slices. Sprinkle with a little more seasoning and squeeze some lemon juice over the top!
