Cashew Split Pea Soup
Another amazing simple dish, *garnish with red cabbage.
Directions: 🔹Soak 1 1/2 cups of split peas in water overnight. 🔸Soak 1 cup of cashews in water overnight. 🔹Cook Split peas in boiling water with half an onion for about 15 minutes or until peas are soft. Add Himalayan Salt to taste. 🔸Once soft, in blender mix • juice of one lemon • soaked cashews •3/4 of the split peas • onion . 🔹Return everything to shimmer heat for another 10 minutes Finally garnish with red cabbage & Enjoy .
