✨Grilled Blueberry Chicken Skewers

4 boneless, skinless chicken breasts
1 teaspoon salt
1 teaspoon pepper
1 cup fresh blueberries
2 tablespoons olive oil
2 garlic cloves, chopped
1 tablespoon red wine vinegar
1 lime, zested and juiced
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh cilantro
Cut chicken into 1 or 2-inch chunks, then season with salt and pepper. Add chicken to a baking dish or large ziplock bag. In the bowl of a food processor (or blender), add blueberries, olive oil, lime juice + zest, vinegar, garlic, basil and cilantro. Blend until smooth, then add mixture into bag or on top of chicken in a dish, coating evenly. Refrigerate and marinate for 2-24 hours.
At least 30 minutes before grilling, soak your skewers (if they are bamboo) in water for 30 minutes to prevent them from charring. Preheat your grill to the mid to highest setting (or what you tend to grill your chicken at). Take each skewer and slide 4-5 pieces of chicken on. Grill for 3-4 minutes per side, gently flipping 2-3 times until chicken is cooked through. Chicken will appear charred because of the dark blueberry color, but will not be overdone! Serve over coconut rice with a sprinkling of freshly chopped herbs. 
Coconut Rice
1 cup uncooked jasmine rice
1 cup light, canned coconut milk
3/4 cup coconut water
1/2 teaspoon salt
3 tablespoons unsweetened, flaked coconut
1 tablespoon coconut oil, measured in solid form
2 tablespoons unsweetened, flaked coconut, toasted
Heat a saucepan over medium-high heat and add rice, coconut milk, coconut water, salt and 3 tablespoons of coconut. Stir, then bring to a boil. Reduce to a simmer, cover and let cook for 15-18 minutes, until liquid is absorbed. Fluff with a fork, then stir in coconut oil. Top with toasted coconut before serving.

✨Triple Berry Kale Salad✨

serves 4

CHICKEN STUFFED POTATO SKINS

INGREDIENTS
3 sweet potatoes, washed
2 chicken breasts
¼ cup olive oil

1 chipotle pepper in adobo sauce, chopped
1 tsp dried basil
1 tsp cumin
1 tsp chili powder
salt and pepper to taste
2 cups frozen spinach, thawed
1 cup white cheddar cheese, shredded
chopped cilantro, for garnish

INSTRUCTIONS
Preheat oven to 350&#160;F degrees.
Prick sweet potatoes with a fork all around. Place the sweet potatoes on a baking sheet and bake for about an hour or until fork tender. 
Place your chicken in a baking dish and rub with a tablespoon of olive oil, salt and pepper. Place in the oven with the potatoes and bake for 30 minutes or until cooked through. Allow to cool and shred the chicken with a fork or your hands. When the sweet potatoes are done cut in half and allow to cool.

In a medium size bowl combine the olive oil, lime juice, garlic, chopped chipotle pepper, basil, cumin, chili powder, salt and pepper. Set aside.
If there is liquid in the spinach, make sure you squeeze out all the excess liquid. Toss the spinach and shredded chicken together, set aside and keep warm.

Turn the oven up to 400 degrees. Remove the flesh out of the sweet potato, leaving a medium size layer of flesh inside with the peel so that it can stand up on its own and place in a baking dish. You can use the flesh for another use or to make mashed sweet potatoes.
Brush the skins with with a little of the chipotle sauce and bake for 5-10 minutes until nice and crisp. While the skins bake mix the spinach, chicken and chipotle sauce together. 
Remove skins from the oven and stuff with the chicken mixture, top with shredded cheese and bake for 10 minutes or until the cheese has melted and the skins are hot and crisp.
Serve with fresh chopped cilantro.

Have you ever had God stretch you? Take you out your comfort zone and stretch you?You&#8217;re in the desert going through some trials and God puts you there so He can stretch you? Put u in situation that intimidated you and u said, Lord if You don&#8217;t help me I don&#8217;t have enough. I don&#8217;t have enough patience, I don&#8217;t have enough wisdom, I&#8217;m not gifted enough, I don&#8217;t even have enough money.
Miracles begin when you admit that you don&#8217;t have enough. If you don&#8217;t have enough you&#8217;re just right for a miracle. That&#8217;s when God says, good I got you exactly where I need you to be cause you&#8217;ll turn it over to Me. And when you turn it over to Me I&#8217;ll teach you how to turn not enough into more than enough. ◌

Then, He said something that blew my mind. He told the disciples to sit them down into groups of 50. I don&#8217;t know if you understand this but these people are hungry n were about to faint. The Lord now has in his hands what it takes to release the miracle. 5000 men not to mention women and children and He says sit them down into groups of 50 and 100&#8230; What is He teaching them: patience, that we have a God that moves in decency and in order. That God does not answer our prayers while we are historical. For example, a mother trying to feed her baby but the baby is crying which prevents him from eating. Her breath is filled with milk but the baby won&#8217;t calm down. God&#8217;s breast is filled with milk but we have to stop crying and calm down, get ourselves together so He can feed us with the Word, anoint us, bless us, fill us with the power. Stop crying, God&#8217;s breath is full of what you&#8217;re hungry for. Just stop crying and be patient cause His breast is full of milk n you&#8217;re next in line. When u see your neighbour being blessed, don&#8217;t be jealous, shout for him cause you&#8217;re next in line. Tag someone and say my miracle is coming, it&#8217;s my time now! ✨Grilled Shrimp with Rice✨

ingredients:

1 cup Rice
2 cups Water
7 fresh Mushrooms (medium to large size)
9 raw Shrimp (large size), deveined and shelled with tails on
1 tablespoon Olive Oil
2 teaspoons Chili Powder
1 teaspoons Garlic Powder
½ teaspoon Ground Black Pepper
¼ teaspoon Salt
2 tablespoons Butter
2 whole Green Onions

directions:

Rinse the rice and add to the rice cooker. Slice the mushrooms and add in with the rice. Then add the water, and set to cook. While the rice is cooking, start the grill on medium heat. In a medium size bowl add the raw shrimp, chili powder, garlic powder, pepper, salt and olive oil. Mix the shrimp in with the spices and olive oil until they’re completely coated. Set aside. Cut the green onions into small pieces and set aside.

Add the shrimp on the grill and cook on both sides until done (about 3 to 4 minutes per side for large shrimp). Remove the shrimp from the grill and set aside for just a moment while browning the butter. Add the butter to a small skillet and stir as it melts. Continue stirring.

When it turns a golden color remove the skillet from the heat. At about this time the rice should be done. Add half of the brown butter to the rice and gently mix it together. Add the rice to a serving dish.

Top with the shrimp. Drizzle the remaining brown butter over the shrimp and rice. Top with the pieces of green onion. Serve with a side of veggies or a salad.
